- 2 cloves of garlic, peeled and finely diced
- 4 green onions, also finely sliced
- 7 cups of chicken stock or broth (for vegetarians – vegetable stock)
- 50g of grated root ginger, finely sliced too
- 1 finely diced hot or medium-hot chili
- Chopped or whole mushrooms (optional)
In a big pan, add the garlic, onions, mushrooms, and the ginger and cook on low heat for a few minutes, and sauté them. Then, add the whole stock and boil. Don’t forget to stir gently, until the ingredients are soft. Add the chopped chili and stir for 5 minutes. Serve the soup while it is still warm.
